Derek Macgregor, chef at Le Chien Noir Bistro in Kingston, is originally from Summerstown, Ontario; the place where his mother first sparked his interested in cooking.  Years later, Derek has many culinary accomplishments under his belt. Straight out of culinary school Derek landed a job at the National Arts Council in Ottawa; followed by a stint at the French Embassy. While in Ottawa, he cooked numerous times at Parliament Hill and 24 Sussex Dr., entertaining the palates of everyone from the Prime Minister to the Queen and Prince Philip.

Now in Kingston, Derek feels lucky to be here, where most of our producers are within a 20 minute drive of his restaurant. "I can go to the local abattoir and pick out the lamb I want for a special that night- that just doesn't happen in big cities" says Derek.  Derek's cooking philosophy is simple - quality fresh ingredients prepared well. His recipes rarely have more than 6-7 ingredients, stating that anything more than that and everything just gets muddled together.

Chien Noir Bistro has a decidedly classic French bistro feel, with menus and wine lists that reflect this. The restaurant is very committed to using local food as much as possible. They are so committed in fact, that they have essentially bought a share in a local farm for all their salad greens and a variety of other produce such as tomatoes.
